Skinny Girl Recipe

I am trying to try new recipes to keep my mind off of other things...SO My sister got me this book written by Bethanny from Real Housewives of NYC. So Last night while Cj & Caden were watching the Laker game I decided to make myself the Spinich Ricotta & Chive Pasta dish...At first I wasnt impressed. When I put it together the whole dish the ricotta stuck to the top and didnt work However I heated it up today and it was amazing. The Ricotta melted all in it and it was so flavorful and awesome and it was lowfat on top of that. I am going to make it for dinner one night and not tell Cj it is diet food and Im sure he will love it too. Below is her recipe and in red is the changes I made...Make it...It tasted SOOOOO yummy! Im going to try the Spaghetti Squash recipe this week as well

Spinach, Chive, Ricotta Pasta Ingredients:
1 bag washed baby spinach
1 lb. spinach linguini I used whole wheat pasta instead. It was cheaper and tastes yummy
1 C ricotta ( I used skim milk ricotta)
2 T chopped chives ( I eye balled it I loooove chives so I probably used 4 tablespoons)
Olive oil
Salt and pepper
2 cloves minced garlic (I used the pre packaged garlic and probably more that 2 cloves total) But i sauteed it so it wasnt as strong)
1/2 c freshly grated parmesan
2 T toasted pine nuts
2 T olive oil
Bring pot of salted water to boil Meanwhile, heat large nonstick pan over medium high heat and add spinach then garlic. Saute until wilted and add salt and pepper. Turn off heat. When pasta is cooked, add to spinach with a small amount of pasta water (reserve some more of the pasta liquid for later). Add remaining ingredients (except chives and pine nuts) and toss well. Season with salt and pepper to taste. Finish with fresh chives, pinenuts and more grated parmesan.

It took me about 30 minutes total and I had left overs which I had some for lunch today too & still have noodles left over at home
